THE STORY
Second point, Heather Valley Honey is unfiltered. This means bits of pollen are in the honey, making it more effective for alleviating allergies. You will see a bit of cloudiness in Jim’s raw unfiltered honey. This is a good thing. Honey that is crystal clear has been filtered, which means the bottler has removed valuable bits of pollen that provide many health benefits. But unfiltered honey is more prone to crystalizing. Just remember to set your honey jar in very warm water, and eventually the crystals will liquify again. Microwaving will destroy valuable bacteria and enzymes, so remember that in case you get impatient to get rid of the crystals faster.
